A fermentation lock protects your mash or your drink from penetration by unpleasant bacteria. During the production of alcohol, the rising gasses can easily go up through the air lock and escape - but at the same time, no foreign matter can enter the container. A fermentation lock is therefore also sometimes called a fermentation guard.
