CopperGarden® Cataplana Roasting Pan, 30cm

With this versatile Cataplana, popular in the south as a universal cooking device and roasting pan, you will receive a unique tool for frying, cooking, baking, serving, and eating. This Cataplana is made from bare copper, sturdily shaped, and has long been suitable for both outdoor and camping kitchens as well as for luxurious, exceptional dishes at home or for special events in experiential gastronomy. A Cataplana can do it all.

This Cataplana has been crafted with great care and expertise in a small Portuguese manufactory and is coated with 100% pure tin for food safety. Due to this high-quality craftsmanship, it is suitable for all types of preparation, from searing to serving, and you can use it to prepare and, if necessary, store all kinds of food.

This unique cooking device comes from Portugal and is traditionally used there (similar to the Römertopf in our culture) for baking in the oven, on a gas stove, or over an open fire. It offers a wonderfully versatile shape with many possibilities, also in modern kitchens. The Cataplana consists of two halves that can be used either as a lid or as a cooking device. The choice is yours.

Historical Background: The Cataplana originally comes from hunting and horseback riding. Thanks to its two half-shells, a rider could carry the cooking device on their belt, as it was lightweight yet extremely durable. A traveler could not only eat from the Cataplana the game they hunted or fish they caught but also prepare, store, and transport their food. The two halves can be clipped together like a bag, making it an ideal universal camping cooking device.

However, you should be aware that copper offers extremely good thermal conductivity. The handle will become as hot as the entire device during use. Please be cautious and use oven mitts and trivets.

Manufacturer's Address: UNICOBRES GmbH & Co.KG, Hersfelder Strasse 16, 36132 Eiterfeld, Germany, Email: info@destillatio.com

Why Tinned Copper? Copper provides the best thermal conductivity. With a core or coating of aluminum or steel, this advantage is lost. Tinning is 100% safe, as the body simply expels tin. The thermal conductivity remains intact. Additionally, tin combined with a little oil provides excellent non-stick properties. You will love it! If the tinning ever becomes unsightly or scratched, it can be re-tinned at any time, ensuring that the pot remains usable for a lifetime. Quality that lasts for centuries.

Healthy Cooking in the Cataplana

Our tip for a healthy life, durable copper pots, and fun in the kitchen: use only good oils and add a bit at the very beginning to your Cataplana. A copper pot should not be heated empty.

Important to know: At 232 degrees, the tin coating may start to melt. At 250 degrees, the copper can warp.

A typical stovetop can reach 400u00b0 Celsius, a glass ceramic cooktop can reach 600u00b0, and a gas flame or open fire can exceed 1,000u00b0!

No need to worry! In normal cooking, frying, and baking, you will never reach these temperatures.

Pay attention to the smoke point. Itu2019s simple: if the oil is smoking, itu2019s too hot! You can harm your health long before your Cataplana roaster suffers.

Frying and deep-frying become unhealthy at temperatures above 175u00b0! Acrylamide forms. Even high-heat oils will burn at around 200u00b0 Celsius at the latest. There is only one exception: artificially highly refined sunflower oils can withstand extreme temperatures over 230 degrees.

Put your food in the pot before the oil burns! Your health will thank you, and so will your Cataplana!

Another tip: You donu2019t need a thermometer for frying. Use a wooden cooking spoon and hold the end in the hot oil. If fine air bubbles come from the handle, the oil is hot enough for frying and deep-frying. If it starts to smoke, itu2019s much too hot.

What if it happens! If you accidentally heat your copper pot above 232u00b0, the tin may melt. It is 100% safe for health even if it ends up in your food. Your body will simply expel it. If necessary, the pot can be re-tinned.

If you expose your copper pot to temperatures above 250 degrees, it could warp. This is usually not a problem, but when cooking on an electric cooktop, it might cause heat transfer losses due to the warped bottom.

One more important note: Copper transfers all temperatures very quickly, including to the handle! Please use an oven mitt or cloth when handling the pot.

This Cataplana is a very high-quality cooking device. With a little love, this wonderful Cataplana will bring you much joy and accompany you for a lifetime.

Copper is a living metal and will change color with use. You can polish away these signs of life, but we recommend not doing so and letting the pot age with dignity.

Tin may dull with use. The original silver shine will turn into a matte gray. If you wish, you can re-tin it at any time. This will cost around 40 euros for a pot of this size but is not necessary as long as the coating is not heavily worn or scratched.
