"CopperGarden®" 36 cm Cataplana Roaster
With this versatile Cataplana roaster from Portugal, you get a unique cooking utensil for frying, cooking, baking, serving, and eating. The Cataplana has been stably shaped from pure copper and has long been as suitable for outdoor and camping kitchens as it is for luxurious and extraordinary dishes at home or for special events in experience gastronomy. A Cataplana can do it all, and this impressive 36 cm variant just about fits in a standard oven.
This Cataplana was made for you in the "CopperGarden®" manufactory with much love and expertise and has been coated with 100% pure food-safe tin. Tin is completely harmless to health and protects both the copper and your food. But the best part is the incredible non-stick effect of pure tin in combination with a bit of oil. This makes the Cataplana wonderfully easy to care for and simple to clean. Due to its high-quality craftsmanship, it is suitable for all cooking methods, from searing to steaming to baking, and can even serve as a serving bowl in the end. You can prepare all types of food in the Cataplana and even store them if necessary.
This unique cooking utensil comes from Portugal, where it is traditionally used (similar to our Römertopf) for baking in the oven, on a gas stove, or over an open fire. It is a wonderfully versatile shape with many possibilities even in modern kitchens. The Cataplana consists of two shells that can be used either as a lid or as a cooking utensil. You have the choice.
History: The Cataplana originally comes from hunting and horseback riding. Thanks to the two half-shells, a rider could carry his cooking utensil on the side of the saddle; the material was light and at the same time indestructible. A traveler could not only eat his hunted, fished, or gathered food from the Cataplana but also prepare, store, and transport it. The two half-shells can be folded together like a bag and are still suitable as a camping cooking utensil today.

Healthy Cooking with the Cataplana

Our tip for a healthy life, everlasting copper pots, and fun in the kitchen: use only good oils and add a little at the beginning in your Cataplana. A copper pot should not be heated empty.

Important to know: starting from 232 degrees, the tin coating can melt. At 250 degrees, the copper can deform.

A regular stovetop can heat up to 400u00b0C, a glass-ceramic cooktop up to 600u00b0C, and a gas flame or fire up to over 1,000u00b0C.

Don't worry! With normal cooking, frying, and baking, you will never reach these temperatures.

Pay attention to the smoke point. It's simple: if the oil smokes, then it is too hot! You harm your health long before your Cataplana brasier suffers.

From 175u00b0C, frying and grilling become unhealthy! Acrolein is formed. Even highly heatable oils burn by 200u00b0C at the latest. There is only one exception: artificially highly refined sunflower oils can reach extreme temperatures above 230 degrees.

Add your ingredients to the pot before the oil burns! Your health will thank you, and so will your Cataplana!

Another tip: You don't need a thermometer for frying. Use a wooden spoon and hold the end in the hot oil. If fine bubbles come out of the spoon handle, the oil is hot enough for frying. If it starts to smoke, it is much too hot.

What if it happens? If you accidentally heat your copper pot above 232u00b0C, the tin can melt. It is 100% harmless to health even if it ends up in the food. Your body will simply excrete it. If necessary, the pot can be re-tinned.

If you expose your copper pot to temperatures above 250 degrees, it can warp. This is actually not a problem, but when cooking on an electric stovetop, there could be heat transfer losses due to the warped bottom.

Another important thing: Copper transfers all temperatures very quickly. Also to the handle! Please use a pot holder or cloth when handling the pot.

This Cataplana is a very high-quality kitchen utensil. With a bit of love, this wonderful Cataplana will quickly bring you much joy and accompany you for a lifetime.

Copper is a living metal and will change color with use. You can polish away these marks of life, but we recommend letting the pot age with dignity.

Tin can become dull with use. The original silver sheen changes to a matte gray. You can re-tin it anytime if you wish. This will cost around 40 euros for a pot of this size, but it is not necessary as long as the coating is not heavily worn and scratched.
