"CopperGarden®" 30cm CATAPLANA Roasting Pan Made of Copper
This unique cooking device comes from Portugal and is traditionally used (similar to our Roman pot) for baking in the oven, on a gas stove, or over an open fire. It offers a wonderfully versatile shape with incredible possibilities in modern kitchens, as well as for camping and outdoor cooking over a campfire or grill.
The CATAPLANA can be effortlessly separated into two halves with a single motion and used individually for searing, cooking, or serving. The copper, coated with pure tin, provides excellent non-stick properties in combination with oil, making it perfect for both high-temperature searing and slow cooking. With the lid, the CATAPLANA becomes a small flavor miracle, preserving vitamins and taste while steaming and slow-cooking. Cooking in its own steam is fantastic, allowing you to save on aluminum foil for yourself and the environment.
In Portugal, seafood is mainly prepared in the closed CATAPLANA and served hot at the table with incredibly intense and delicious aroma and fragrance. History: The CATAPLANA originally comes from hunting and horseback riding. Thanks to the two half-shells, a rider (knight) could conveniently carry their cooking device attached to their belt or saddle. A copper CATAPLANA is relatively lightweight compared to other cooking devices and forgiving of any knocks and bumps. Even better: The game, fish, or forage collected while on the go can be comfortably transported in the CATAPLANA. The two halves can be closed like a bag. <h2>Healthy Cooking in the Cataplana</h2> <p>Our tip for a healthy life, long-lasting copper pots, and fun in the kitchen: only use good oils and add a bit to your Cataplana right at the start. A copper pot should not be heated empty.</p> <p><strong>Important to Know:</strong> At around 232 degrees Celsius, the tin coating may start to melt. At 250 degrees Celsius, the copper can warp.</p> <p>A regular stovetop can reach temperatures of 400u00b0, a glass-ceramic cooktop can reach 600u00b0, and a gas flame or fire can exceed 1,000u00b0!</p> <p><strong>Don't be afraid!</strong> During normal cooking, frying, and baking, you will never reach these temperatures.</p> <p><strong>Watch for the Smoke Point.</strong> It's simple: if the oil is smoking, it's too hot! You can harm your health long before your Cataplana suffers any damage.</p> <p>At 175u00b0, frying and deep-frying become unhealthy! Acrylamide forms. Even high-temperature oils can burn by around 200 degrees. There is only one exception: artificially highly refined sunflower oils can withstand extreme temperatures over 230 degrees.</p> <p><strong>Add your food to the pot before the oil burns!</strong> Your health will thank you, and so will your Cataplana!</p> <p><strong>Another Tip:</strong> You don't need a thermometer for frying. Use a wooden cooking spoon and hold the end in the hot oil. If fine air bubbles come from the handle, the oil is hot enough for frying and sautu00e9ing. If it starts smoking, it's way too hot.</p> <p><strong>What if it happens?</strong> If you accidentally heat your copper pot above 232u00b0, the tin may melt. It is 100% health-safe, even if it ends up in your food. Your body will simply expel it. If necessary, the pot can be re-tinned.</p> <p>If you expose your copper pot to temperatures above 250 degrees, it may warp. This is not usually a problem, but when cooking on an electric cooktop, the warped bottom may cause heat transfer losses.</p> <p><strong>Another Important Note:</strong> Copper transmits all temperatures very quickly u2013 including the handle! Please use an oven mitt or cloth when handling the pot.</p> <p>This Cataplana is a very high-quality cooking device. With a little love, this wonderful Cataplana will quickly bring you joy and accompany you for a lifetime.</p> <p>Copper is a living metal and will change color with use. You can polish away these marks of life, but we recommend against it and suggest letting the pot age gracefully.</p> <p>Tin can become dull with use. The original silver shine transitions to a matte gray. You can re-tin it at any time if you wish. This will cost around 40 euros for a pot of this size, but it's not necessary as long as the coating is not heavily worn or scratched.</p> <p> </p>
