"CopperGarden®" 18 cm Cataplana Casserole
The highly versatile Cataplana casserole, made of copper coated with pure tin, will delight you. You can use a Cataplana without a lid as a frying pan or wok for searing, gentle simmering, or boiling. The "CopperGarden®" Cataplanas can be separated into two parts, both of which can be used individually as desired. For instance, you can prepare side dishes in one half and the main course in the other. The two halves can also be used for serving, as a salad bowl, or as a plate.
When assembled with the lid, the Cataplana transforms into a fantastic casserole for braising, steaming, or baking. In Portugal, deliciously aromatic seafood is prepared in the Cataplana. The steaming in a closed space preserves the aromas and offers unexpectedly intense taste experiences. The Cataplana can do almost everything and is also suitable as a baking pot for baking bread directly in the embers.

<h2>Healthy Cooking in the Cataplana</h2> <p>Our tip for a healthy life, long-lasting copper pots, and fun in the kitchen: use only good oils and add a bit of it to your Cataplana right from the start. A copper pot should not be heated when empty.</p> <p><strong>Important to know:</strong> At 232 degrees, the tin coating could melt. At 250 degrees, the copper may warp.</p> <p>A standard stovetop can reach 400u00b0 C, a glass-ceramic cooktop can reach 600u00b0, and a gas flame or fire can exceed 1,000u00b0 C!</p> <p><strong>Donu2019t worry!</strong> During normal cooking, frying, and baking, you will never reach these temperatures.</p> <p><strong>Watch for the smoke point.</strong> Itu2019s simple: if the oil is smoking, itu2019s too hot! You are harming your health long before your Cataplana shows signs of damage.</p> <p>At 175u00b0 C, frying and deep frying become unhealthy! Acrylamide forms at this temperature. Even oils that are highly heat-resistant will burn by 200u00b0 C at the latest. There is one exception: artificially highly refined sunflower oils can withstand extreme temperatures above 230 degrees.</p> <p><strong>Add your food to the pot before the oil burns!</strong> Your health will thank you, and so will your Cataplana!</p> <p><strong>Another tip:</strong> You donu2019t need a thermometer for frying. Use a wooden cooking spoon and hold the end in the hot oil. When fine air bubbles rise from the spoon handle, the oil is hot enough for frying and frying. If it starts to smoke, it is much too hot.</p> <p><strong>What if it happens anyway?</strong> If you accidentally heat your copper pot above 232u00b0 C, the tin could melt. It is 100% safe even if it ends up in the food; your body will simply expel it. If necessary, the kettle can be re-tinned.</p> <p>If you expose your copper pot to temperatures over 250 degrees, it may warp. This is generally not a problem, but when cooking on an electric cooktop, the warped bottom could lead to transmission losses.</p> <p><strong>One more important point:</strong> Copper transmits all temperatures very quickly, including at the handle! Please use an oven mitt or cloth when handling the pot.</p> <p>This Cataplana is a very high-quality cooking device. With a bit of love, this wonderful Cataplana will quickly bring you joy and accompany you for a lifetime.</p> <p>Copper is a living metal and will change color with use. You can polish away these marks of life if you wish, but we recommend leaving it and allowing the pot to age gracefully.</p> <p>Tin can become dull through use. The original silver shine transitions to a matte gray. You can re-tin it anytime if you want; this will cost around 40 euros for a pot of this size, but it is not necessary as long as the coating is not heavily worn or scratched.</p>
